Vermouth Glazed Onions Bacon And Jarlesburg Tarts Recipe

Ingredients
  • For dough: 2 cups flour
  • 1/2 cup butter
  • 1/2 cup cream cheese
  • For filling: 5 Vidalia onions - sliced into 1/8 inch rings
  • 1/4 cup butter
  • 3 garlic cloves - minced
  • 1/2 cup dry white Vermouth
  • 3 sprigs of thyme (or 1 tsp dry)
  • 1 sprig tarragon (or 1/2 tsp dry)
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1 Tbsp cider vinegar
  • For topping: 1 lb sliced bacon - cut in thin strips (easier when chilled)
  • 2 cups grated Jarlesburg (you can also use slices)

Directions
  1. Combine dough ingredients and chill.
  2. Brown the bacon until crisp. Drain on paper towel and set aside.
  3. In a large fry pan, melt 3 Tbsp of the butter and sauté the onions for 15 minutes until golden brown, regularly scraping up the caramel from the bottom of the pan.
  4. Add garlic, thyme, salt, tarragon & pepper. Cook 1 minute to release aromas.
  5. Add Vermouth and cook 2 minutes until alcohol boils off.
  6. Adjust salt, fold in remaining butter and add cider vinegar off heat. Remove the thyme and tarragon sprigs, although you can scrape off the leaves and return to the filling - just take out the stems.
  7. Preheat oven to 400 degrees.
  8. Remove tart dough from fridge, pinch off gumball-sized amount and drop in a non-greased muffin tin. Press to cover bottom and half way up sides. Repeat with remaining dough.
  9. Sprinkle a pinch of bacon in the bottom followed by 2 Tbsp of onion filling. Sprinkle with more bacon and top with cheese.
  10. Bake for 20-25 minutes until edges of tart are golden and cheese starts to brown. Let cool 5 minutes before serving.

I did make them for my grandfinal crowd of free loaders...lol My mates all converge to my house for the sport...

I served them up with my home made brushetta sub pizzas and also used my artisan bread dough - they were a great hit - well done Montreal girl :-) and thanks!
