Definintely not your normal spinach dip. A mixture of green chiles, onions, tomatoes make this a great tasting, spicy, south of the border version.

try adding other cheeses such as Parmesan or just play around with cheese for different flavors.

I added hot sauce and more chilies, I have been looking for a spinach Mexican dip. It didn't seem as smooth as the ones that I had before. I think that I will still "tweek it". I did add 5 drops of hot sauce, more chopped chilies, and 1 cup cheddar cheese. I am looking for the perfect 'spinach Mexican dip" with my 'extras' it seemed close - but still not smooth enough. Does anyone have something better?
