These cheesy enchiladas are great with a side of corn bread or Mexican rice. They are super filling, but they not only taste even better the next day but also freeze well.

These were so good! I made them tonight but only added about 1 Tbsp of the green chilis so my kids wouldn't complain they were too spicey. Really yummy and easy! Thanks for the recipe! :)
