Ingredients
  • 1 pound orecchiette pasta
  • 1 bunch broccoli rabe
  • 1 1/2 pounds sweet Italian sausage cut into 1/2' rounds
  • 1 clove garlic, minced
  • 1 teaspoon crushed red pepper
  • Extra virgin olive oil, as needed
  • 2 tablespoons Parmigiano Reggiano cheese, grated
  • Salt and pepper to taste

Directions
  1. Cook pasta in a large pot of boiling salted water until al dente.
  2. Drain, drizzle with olive oil and reserve.
  3. While pasta cooks, blanch the rabe for 1 to 2 minutes in large pot filled with salted water.
  4. Cook sausage in a large frying pan over medium heat.
  5. Set aside to cool.
  6. When ready to serve, heat a large frying pan with a coating of olive oil.
  7. Add the pasta, sausage and garlic.
  8. Add the rabe and crushed red pepper.
  9. Heat through on medium heat.
  10. Finish with the cheese and salt and pepper to taste.
