How to make it

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Drain, drizzle with olive oil and reserve.
  • While pasta cooks, blanch the rabe for 1 to 2 minutes in large pot filled with salted water.
  • Cook sausage in a large frying pan over medium heat.
  • Set aside to cool.
  • When ready to serve, heat a large frying pan with a coating of olive oil.
  • Add the pasta, sausage and garlic.
  • Add the rabe and crushed red pepper.
  • Heat through on medium heat.
  • Finish with the cheese and salt and pepper to taste.

    One of my favorite combinations of ingredients for a meal of pasta. I used so much more garlic and Italian cheese. I used 4 good-sized cloves of garlic sliced thin (what's an Italian dish without a lot of garlic?) and at least 1/2 cup grated cheese. I wasn't shy with the olive oil either.
    I like to sautee broccoli rabe as opposed to blanching it (personal preference). It tends to not wash away that 'peppery bite'.
    I also like to use bulk sausage out of the casing instead of slicing.
    This recipe is so forgiving to your personal likes and dislikes. Adjust ingredients accordingly. Thanks Lacrenshaw for posting!
