Marsala Chicken and Mushroom Casserole

- 2 Tbs butter shopping list
- 10oz. sliced mushrooms shopping list
- 11/2Tbs flour shopping list
- 1/2c marsala wine or white wine shopping list
- 1/2c heavy cream shopping list
- 2Tbs chopped flat leaf parsley shopping list
- salt and pepper shopping list
- 1c long grain rice shopping list
- 2 packed cups coarsely chopped rotisserie chicken shopping list
- 2Tbs grated parmesan cheese shopping list
How to make it
- Preheat oven to 350. In large skillet,heat butter over med-high heat until just melted. Add mushrooms and cook,stirring occasionally,until softened,about 5 mins.. Sprinkle the flour on top and stir 1 min. Stir in marsala wine and cream and simmer,stirring occasionally,until slightly thickened,about 3 mins. Stir in 2 cups water,the parsley,1tsp. salt and 1/2tsp pepper.
- In a greased 9x13" casserole,spread the rice in an even layer;top with the chicken. Pour the mushroom gravy on top. Cover snugly with foil and bake till bubbly,about 35 mins. Discard the foil,sprinkle the parmesan on top and bake for 5 mins. more.
- Had this over the weekend. It is wonderful!
