Ingredients
  • 8 bone-in chicken breast halves
  • Salt and pepper
  • 3 tablespoons olive oil
  • 2 lemons
  • 2 mediums onions, chopped
  • 4 cloves garlic, minced
  • 1 cup green olives, pitted and halved
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper

Directions
  1. Sprinkle chicken with 1 teaspoon each salt and pepper.
  2. In large skillet heat 2 tablespoons olive oil over medium heat.
  3. Sear chicken (in two batches), skin-side first until golden brown or about 3 minutes per side.
  4. Transfer chicken to a plate.
  5. Cut lemons in half lengthwise and then into thin slices crosswise.
  6. If skillet is dry add remaining 1 tablespoon oil.
  7. Add onions and garlic; cook over medium heat until soft, about 3 minutes.
  8. Stir in lemon slices, olives, stock and 2 cups water.
  9. Bring to a boil, reduce heat and simmer for 10 minutes.
  10. Put chicken on top of mixture and pour in accumulated juices from plate.
  11. Sprinkle with thyme and crushed red pepper.
  12. Cover and simmer until chicken is cooked through, about 15 minutes.

We made this last night. This is a MUST TRY!! The kids loved it. Turns flavorless boring chicken into a tender, juicy, flavorful dish! I'll be adding this to the regular family favs. Can we give SIX forks? I would!
