Pork Tenderloin Diane Recipe

Ingredients
  • 1 pork tenderloin, about 1 1/2 pounds
  • 2 teaspoons lemon pepper seasoning
  • 1 tablespoon butter
  • 1/4 cup brandy or chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1/4 cup heavy whipping cream
  • Chopped fresh parsley-optional

Directions
  1. Trim fat and silverskin from tenderloin
  2. Cut pork into 1-inch thick medallions; flatten slightly with heel of hand
  3. Season medallions with lemon pepper
  4. In large skillet, melt butter over medium-high heat
  5. Add medallions; cook until no longer pink, about 3 to 4 minutes per side
  6. Transfer meat to a platter; cover to keep warm
  7. Add brandy,lemon juice, worcestershire and mustard to skillet
  8. Stir to scrape browned bits from bottom of pan
  9. Stir in cream; cook until heated through, about 1 to 2 minutes
  10. Serve sauce over pork
  11. If desired, garnish with parsley

Great recipe..five forks


Made this a few nigts and thought it was fantastic!! Since I' not a brandy drinker and therefore never have it in the house, I used chicken stock (homemade - of course).
Cant wait to try this with chicken!!
P.S. The only thing I would do differently would be to lightly coat the chops in flour before frying, I just think it would thicken the sauce up a little more! Great Recipe. If I could give it ten forks I would!
