How to make it

  • Combine grated zucchini, parsley, lemon zest and garlic then season with salt and pepper.
  • Stir n eggs and flour then heat 1/4" oil in skillet until it ripples.
  • Spoon batter by tablespoons into skillet and flatten each mound into a 3” pancake.
  • Cook pancakes 1 minute on each side then remove with spatula to paper lined baking sheet.
  • Keep warm in a 250 degree oven while you continue to prepare remaining batter.
  • Arrange pancakes on platter then sprinkle with salt and garnish with lemon wedges.
