Ingredients

How to make it

  • Preheat oven to 400
  • Lightly grease six muffin tins with butter
  • On baking sheet, bake bacon until done but not crisp
  • Drain on paper towels
  • Cut 6 slices of bacon in half width-wise and line bottom of each muffin tin, swirling, with 2 bacon pieces
  • Line sides of each muffin tin with 2 slices of bacon
  • Sprinkle with cheese
  • Break egg into each cup
  • Salt and pepper
  • Bake 12-16 minutes or until whites and yolks set

    I made this tonight and it was very good! I made it as written except I broke the yolks before adding them to the muffin pan. I also used ham instead of bacon. I just lined the muffin cups with the thin sliced ham then added the cheese then the egg. I baked it for 15 minutes because I don't like my eggs runny. This is a great way to prepare a dozen individual eggs, all at one time! I added my photo:)

    I’m going to make these again and freeze them for camping or in-a-rush-mornings. This is a very nice recipe.

    I did not precook my bacon enough so they were a little chewier than we like but that was my fault and not the recipes’. Added a little extra cheese on top just before they were done, ‘cause we love cheese but was not really needed just personal preference.

    Did switch direction numbers 5 and 6. This gave a nice appearance to the sides and made for easy removal from the tin. Oh, I did have a bit of leftover green chilies and threw them on top, but it wasn’t enough to add any taste.

    These “muffins” would be delicious as Wynnebaer posted, no changes are needed.

    Am gonna try this one, as well, and, like lillian, I'm thinking of all the things you could add to the eggs before baking. :) This is prolly gonna be done this weekend...thanks to lovebreezy for bringing it to our attention in our group, and to you for the addition! :) :)
