Love shrimp any way you fix 'em! This recipe calls for baking them, but, you can also skewer them, grill and baste with the sauce.

Ingredients
  • 1 1/2 pounds medium shrimp, shelled and eveined
  • 1/2 cup butter
  • 1/4 cup vegetable oil
  • 8 cloves garlic, finely chopped
  • 1 to 3 dried de arbol chiles, coarsely crumbled (or whatever type is available)
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • Scallion tops, slivered (for garnish)

Directions
  1. Preheat oven to 400 degrees F.
  2. Rinse and drain shrimp well
  3. Heat butter and oil in small skillet over medium heat until butter is melted and foamy.
  4. Add garlic, chiles, lime juice and salt.
  5. Cook and stir 1 minute.
  6. Remove from heat.
  7. Arrange shrimp in an even layer in a shallow 2-quart baking dish. Pour hot butter mixture over shrimp.
  8. Bake shrimp 10 to 12 minutes until shrimp turn pink and opaque, stirring once.
  9. DO NOT OVERCOOK or shrimp will be dry and tough.
  10. Garnish with slivered scallion tops.

Mmmm Buttery, garlicky, spicy shrimp! I think I'd go with skewering and grilling, though. Never even heard of baking shrimp before - don't trust myself with it. Good one, Lori. ;')

Lori,the shrimp were outstanding! They will be one of our favorites. Had pasta with them and it was a perfect meal.


This sounds buttery and garlicky and spicy and delicious! I love the idea of pasta with this! This would probably be great with chicken also!
