- 1/2 tsp. olive oil or vegetable oil shopping list
- 2 eggs shopping list
- 2 (8 in. or 10 in.) flour tortillas shopping list
- 1/2 cup shredded cheddar cheese shopping list
- salsa (optional) shopping list
How to make it
- Heat a nonstick skillet big enough to fit the tortillas, over medium-low heat. Add oil.
- Add eggs, breaking yolks. Cook until eggs are set enough to flip, about 2 minutes. Flip; cook until eggs are done (over hard), about 2 minutes.
- Transfer to a plate. Wipe out pan.
- Return pan to heat and increase temp to medium.
- Place 1 tortilla in pan. Sprinkle on half of cheese. Place cooked egg over the cheese. Top with remaining cheese and tortilla.
- Cook until bottom tortilla is light brown and cheese starts to melt. About 1 to 2 minutes.
- Flip with spatula and brown other side.
- Remove from pan. Cool 1 minute. Slice into wedges.
- Top with salsa if desired.

Okay, I tried this and it was very good! I made it exactly as written. I topped it with my homemade salsa and I sprinkled it with fresh chopped cilantro. Its a great way to change up the usual breakfast! I will be making this a lot! I added my photo!
