Ingredients
  • 8 ounces chuck, trimmed, cut into 1 1/2-inch cubes
  • 8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes
  • 1/2 teaspoon kosher salt
  • Toasted Kaiser Rolls

Directions
  1. In separate batches, pulse the chuck and the sirloin in a food processor 10 times.
  2. Combine the chuck, sirloin, and kosher salt in a large bowl.
  3. Form the meat into 4-ounce patties.
  4. Heat a cast iron skillet or griddle over medium-high heat for 2 to 3 minutes.
  5. Place the hamburger patties in the pan.
  6. For medium-rare burgers, cook the patties for 4 minutes on each side.
  7. For medium burgers, cook the patties for 5 minutes on each side. Flip the burgers only once during cooking. Do not mash.

I can see the point. I'll have to try it. I got hooked on AB a couple years ago when I broke my hip and learned to watch TV. I like his nerdy philosophy and humour.


You had me at AB...he doesn't ever do a bad recipe. If you ever have the opportunity to see him in person, GO!!!! Saw him at the Cleveland Food Show 2 years ago and he was like a rockstar. Awesome. Great burger, too!

My mother never puts anything but salt and pepper in her hamburgers and they are the best in the world. AB is an amazing chef and really funny and entertaining. Great post. (Mayonnaise is the perfect condiment for this burger!)


Delicious....AB is fun and entertaining to boot. I will say making his gyro meat in a loaf pan is the best I ever tasted too. Better than the Greek restaurant down the street. Love this.
