- 1Tbs minced garlic shopping list
- 1Tbs minced onion shopping list
- 2Tbs butter shopping list
- 1/2c dry white wine shopping list
- 1/4c fresh lemon juice shopping list
- 2/3c cold butter,sliced shopping list
- 1-1/2c chopped sun-dried tomatoes shopping list
- 1/4c chopped fresh basil shopping list
- 1/2tsp kosher salt shopping list
- 1/2tsp white pepper shopping list
- 6 boneless,skinless chicken breast halves shopping list
- extra virgin olive oil,for brushing shopping list
- 1/2tsp salt shopping list
- 1/2tsp black pepper shopping list
- 8 oz. goat cheese,room temperature shopping list
How to make it
- Saute garlic and onion in 2 Tbs butter in a large skillet over med. heat till tender.
- Stir wine and lemon juice into skilet,increase heat to med. high and simmer to reduce by 1/2.
- Reduce heat to low and stir in cold butter,one slice at a time.
- Stor in tomatoes,basil,kosher salt,and white pepper;remove from heat;set aside.
- Brush chicken breasts with olive oil and sprinkle with salt and black pepper.
- Grill chicken over hot coals 15-20 mins,or until cooked through.
- A couple of mins. before chicken is done,place equal amounts of cheese on each breast. Spoon prepared sun dried sauce over chicken.
- Cut the lemon juice in half.
