How to make it

  • Prepare the asparagus by rinsing them thoroughly; break off any tough, white bottoms and discard.
  • Using a vegatable pealer remove the skin off the bottom 1/2 of the asparagus spears. This makes the whole spear edible.
  • Fill a medium sized saucepan half way with water, bring to a boil.
  • Add the asparagus and reduce heat slightly to a simmer.
  • Parboil the asparagus for exactly 3 minutes.
  • Drain the hot water.
  • While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon zest.
  • Salt and pepper to taste.
  • Serve warm or room temperature.

    Ok, I just browsed through 573 recipes for asparagus...well, maybe just 400 recipes. You have won hands down for providing good instructions and a low-fat, flavorful side dish. I'm going to make this right now. I'll come back later and leave you some feedback. Thanks for posting.
    UPDATE: I just made this. I steamed the asparagus in a convection steamer and I did not peel the stems (way too much work). They still taste wonderful with the addition of some seasoning salt. I used the juice and the zest of the lemon. Very nice, and I'm not a huge asparagus fan. Thanks again.
