Italian Meat Roll Recipe

Ingredients

2 eggs beaten

3/4 cup of soft bread crumbs

1/4 catsup

1/4 cup of milk

2 Tablespoons of minced parsley

1/2 teaspoon dried oregano

1/2 teaspoon of garlic powder

1/2 teaspoon of salt

generous pinch of red pepper flakes or use 1/4 teaspoon of black pepper

1/4 teaspoon of ground fennel

1/8 teaspoon of ground nutmeg

1 1/2 lb. of ground beef

1/2 lb. of ground pork

1 small yellow onion minced (sweat in microwave with a tsp of oil)

2 garlic cloves minced (sweat in microwave with a tsp of oil)

1 package of frozen chopped spinach defrosted and squeezed dry

8 slices of proscuitto

6 oz. of shredded mozzarella cheese

1 package of sundried tomatoes, rehydrated in hot water.

1 tsp of sugar

1/2 cup of beef stock

1/4 cup of red wine

4 slices of provolone cheese

Directions

Combine egge, bread crumbs, catsup, milk, parsley, oregano, and seasonings.

Mix in, beef and pork. Mix well but don't over mix.

Mix garlic and onion to the spinach.

On foil or waxed paper pat meat mixture to a 12 x 9 rectangle.

Top with spinach but don't spread to the edge.

Top with shredded cheese and a layer of proscuitto.

Starting at the short end, carefully roll up meat, using the foil to lift the mixture.

Seal the edges and the ends.

Place roll seam side down in a 13 x 9 baking dish.

Blend hydrated tomatoes with stock, wine and sugar.

Pour over the meat roll.

Bake in a 350 degree oven for 1 hour and 15 minutes.

Top with provolone cheese and return to oven to melt the cheese completely.

Allow to rest for 10 minutes.

Slice and serve.

anything is better than what my poor italian mom used to make when she was trying to cook 'american' food...

Made today, added a half lb. of mushrooms sauteed to the filling mixture. Skipped the sundried tomato topping (didn't have in pantry) and topped with jarred marinara. Also mixed part of the mozzarella cheese into the spinach layer to make it more savory and creamy I didn't like the spinach layer with just onion and garlic. Will submit final photo when pulled out of the oven. Smells really good in here now.
