Italian Meat Roll

- 2 eggs beaten shopping list
- 3/4 cup of soft bread crumbs shopping list
- 1/4 catsup shopping list
- 1/4 cup of milk shopping list
- 2 Tablespoons of minced parsley shopping list
- 1/2 teaspoon dried oregano shopping list
- 1/2 teaspoon of garlic powder shopping list
- 1/2 teaspoon of salt shopping list
- generous pinch of red pepper flakes or use 1/4 teaspoon of black pepper shopping list
- 1/4 teaspoon of ground fennel shopping list
- 1/8 teaspoon of ground nutmeg shopping list
- 1 1/2 lb. of ground beef shopping list
- 1/2 lb. of ground pork shopping list
- 1 small yellow onion minced (sweat in microwave with a tsp of oil) shopping list
- 2 garlic cloves minced (sweat in microwave with a tsp of oil) shopping list
- 1 package of frozen chopped spinach defrosted and squeezed dry shopping list
- 8 slices of proscuitto shopping list
- 6 oz. of shredded mozzarella cheese shopping list
- 1 package of sundried tomatoes, rehydrated in hot water. shopping list
- 3/4 lb mushrooms (see alternative variation below) shopping list
- 1 tsp of sugar shopping list
- 1/2 cup of beef stock shopping list
- 1/4 cup of red wine shopping list
- 4 slices of provolone cheese shopping list
How to make it
- Combine egge, bread crumbs, catsup, milk, parsley, oregano, and seasonings.
- Mix in, beef and pork. Mix well but don't over mix.
- Mix garlic and onion to the spinach.
- On foil or waxed paper pat meat mixture to a 12 x 9 rectangle.
- Top with spinach but don't spread to the edge.
- Top with shredded cheese and a layer of proscuitto.
- Starting at the short end, carefully roll up meat, using the foil to lift the mixture.
- Seal the edges and the ends.
- Place roll seam side down in a 13 x 9 baking dish.
- Blend hydrated tomatoes with stock, wine and sugar.
- Pour over the meat roll.
- Bake in a 350 degree oven for 1 hour and 15 minutes.
- Top with provolone cheese and return to oven to melt the cheese completely.
- Allow to rest for 10 minutes.
- Slice and serve.
