Turkish style Zucchini Fritters

- 6 sm zucchini grated shopping list
- salt as needed shopping list
- 1/2 lb White Turkish cheese or feta crumbled shopping list
- 1/4 cup Finely-chopped fresh dill shopping list
- 1/4 cup Finely-chopped fresh parsley shopping list
- 3 x eggs beaten shopping list
- 1/2 cup flour shopping list
- Freshly-ground black pepper to taste shopping list
- oil for frying shopping list
How to make it
- Place grated zucchini in a colander, sprinkle with salt and let stand at least 20 minutes, or until it loses its juice. Squeeze dry and place in a large bowl. Add the cheese, dill, parsley, eggs, flour, and pepper and mix well. Adjust the seasonings. If batter is too runny, add a little more flour.
- * Heat oil in a heavy saucepan. Drop batter by tablespoons into oil and fry until golden brown on all sides but still moist inside, about 2 to 3 minutes. Drain on paper towels and serve warm with Tomato Relish.
- also if u dont like fried u can bake in oven ..

We LOVE this!! I made them & they are absolutely delicious! The 2 herbs in this - the dill & the parsley - make this extra-wonderful. The feta was also terrific in it - crumble it small. I did add a small amount of extra flour to hold the fritter tog...more
