How to make it

  • Place grated zucchini in a colander, sprinkle with salt and let stand at least 20 minutes, or until it loses its juice. Squeeze dry and place in a large bowl. Add the cheese, dill, parsley, eggs, flour, and pepper and mix well. Adjust the seasonings. If batter is too runny, add a little more flour.
  • * Heat oil in a heavy saucepan. Drop batter by tablespoons into oil and fry until golden brown on all sides but still moist inside, about 2 to 3 minutes. Drain on paper towels and serve warm with Tomato Relish.
  • also if u dont like fried u can bake in oven ..

    We LOVE this!! I made them & they are absolutely delicious! The 2 herbs in this - the dill & the parsley - make this extra-wonderful. The feta was also terrific in it - crumble it small. I did add a small amount of extra flour to hold the fritter together nicely while flipping.

    Since I didn't have a tomato relish, I served it with Kutadkubilik's "Cacik" , which was good together ~ but really, the fritter needed nothing ~ it was perfect! I will make this often.
