Ingredients

4 tbls. Butter

3 eggs, beaten

1 cup flour

1 tsp. baking powder

1 cup milk

1/2 tsp. salt

1 tsp. oregano

1 small onion, finely chopped

8 oz. cheddar cheese, shredded

8 oz. pepper jack cheese, shredded

1/2 tsp. garlic powder

2-10 oz. pkgs. frozen spinach, thawed and drained of liquid

Directions

Preheat oven to 350

In 13x9 baking pan, melt butter and using pastry brush coat pan with butter

In mixing bowl, add remaining ingredients and blend until combined

Bake 30-35 minutes

Cut into squares

I made this today for my Mom, sister, and niece at a luncheon. They all loved it. Pretty dish too. Is going to be a regular for me. I did use all cheddar just because my mom's not a spice freak like us, but we put some chipotle tabasco on ours and it was delicious! Great one, Wynne! 5 forks again. LOL
