Bratkuehn Roast Chicken

- 1 hen or capon shopping list
- 8 slices bacon shopping list
- 1 medium onion, sliced shopping list
- 1 c. red cabbage, shredded shopping list
- salt and pepper to taste shopping list
- 1/2 c. Riesling, or other Rhine wine shopping list
- 1 large bunch fresh rosemary shopping list
- 1 stick butter shopping list
How to make it
- Preheat oven to 375.
- Fry bacon, drain, crumble, and reserve.
- In bacon drippings over medium high heat, cook onion until soft. Add cabbage, salt and pepper, Riesling, and bacon. Cook for 5 minutes, and spoon into a baking dish.
- Cut butter into cubes, and stuff chicken with butter and rosemary. Place on cabbage and roast. After 30 minutes, baste with pan juices every 15 minutes, until the thickest part of the breast registers 160.
