Vidallia OnionTomato and Bacon Pie

- 9" partially baked pie shell , 375 for about 10 min shopping list
- 2 large vidalia onions, sliced thin shopping list
- 4 slices thick-cut bacon shopping list
- 2 T butter shopping list
- 4 oz provolone cheese, shredded or sliced into thin slices shopping list
- 1 oz smoked gruyere, shredded shopping list
- 4 eggs shopping list
- 1 C heavy cream shopping list
- 1 med tomato, diced shopping list
- 1/4 cup chopped fresh herbs, i used dill, parsley, and a little tarragon shopping list
- salt, pepper, to taste shopping list
- 1/4 tsp freshly grated nutmeg shopping list
How to make it
- Sauté the bacon slowly in a heavy pan until starting to crisp. Remove and drain on a paper towel. Add the onions and butter to the pan and sauté on medium about 10 minutes, stirring occasionally, until tender. Lower heat to medium-low and sauté another 30 - 45 minutes, stirring occasionally, until the onions have turned a deep golden brown. Remove from heat .
- Whisk the eggs and cream together. Add the nutmeg, and herbs, salt, and pepper, stirring to combine.
- Place carmelized onions on bottom of pie shell, Add the cheeses and tomatoes, top with the cream mixture.
- Bake in preheated 375 oven for approx 30 min or until center is set.
