How to make it

  • Preheat oven to 350 degrees.
  • Butter 8 of the cups of a muffin pan. Sprinkle them with flour; shake off excess.
  • Roll out piecrust and cut out 8 circles 1" wider than the muffin cups. Press the dough circles into the muffin cups. Make sure to cover the bottoms and partway up the sides.
  • Beat together the ground almonds, sugar, egg yolks, zest and flour. Slowly add the cream; beat until mixture is smooth.
  • Add about 1 tablespoon of the filling to each muffin cup (it should not reach the top). Bake 15 to 20 minutes, until the filling is golden brown. Be careful, not to overbake or they turn too brown.
