Blasted Tomatoes!

    I made Tina's
    Blasted Cherry Tomatoes
    last night for the first time. I've had it bookmarked forever.
    Now that the cherry tomatoes are at their peak out in my garden it was the perfect time to give this a whirl. These are dressed up cherry tomatoes. Aromas of shallots and garlic permeated the kitchen and the vermouth added just that extra little something special.
    I chose the roasting method with no heavy cream. Didn't have fresh parsley so just subbed with dried. Otherwise followed the recipe implicitly and it was perfect.

    Thanks Michelle! I broke down last year and bought a bottle. It was for another recipe and I want to say one of Tina's as well but don't quote me. I think it may have been for a scallop or shrimp recipe? It wasn't available in a little bottle where I am.

    Ooooh, good idea, Michelle. I'll have to see if there is vermouth in those little bottles. Where I buy gas, the owner has every kind of little bottle there is, I think! I don't drink hard liquor so I wouldn't buy a whole bottle. But, I suppose it would last "forever" if I had to.

    Yeah, I have no idea what vermouth taste like much less what mixes well with it or if I'd even like it as a drink. I am very picky about my liquor, I really only like vodka lol. Let me know if you see it there FA and I'll keep a look out, we have a new liquor store that has all those little bottles too, hundred of them!

    You could use a dry white wine for vermouth. But since I never stock liquor or wine I just use chicken stock or watered down lemon juice or wine vinegar for most of that stuff, lol ;)

    Do look for the little bottles of vermouth guys. It does have a unique flavour and yes, you could sub it but it's not going to taste the same. I don't know what drinks you can make with vermouth either but I figure I'll be able to make any recipes calling for that for the rest of my life. :) If I could have bought a small bottle I would have.

    Vermouth does not spoil. I've had the same bottle for two years. I use it for fish and chicken once in awhile. But I like it best with the tomatoes.

    You would put vermouth in a martini, just a tiny bit. Olivia taught me to swirl the vermouth in the chilled martini glass and dump it out and then add the gin or vodka.
    Vermouth is great in sauteed mushrooms with fresh thyme.

    When I saw the title of your post, I thought you had too many tomatoes from your garden and they were taking over your life! The recipe looks good, but I don't use alcohol in cooking (the only two exceptions are Chicken Madeira and my Christmas jello). Can you sub water or light chicken broth?
