Easy Oven Fried Chicken

    Not like pan fried because of the potato flakes, but very good! I didn't think the potato flakes would be that good but they were! The chicken was very crispy (I kept the skin on). I added paprika, garlic powder, onion powder, salt and pepper to my mix. Dipped it in beer because - well.... - I had one open! :-D I was going to dish it all up and take a picture but they looked so pretty right out of the oven. :-P Served it with
    Better Mashed Potatoes

    MP, yeah, instant potatoes are potato flakes .... most are 100% potato, and that's what you want. Some of the brands seem to be much finer than others, some are, indeed, more "flake like"...they look a lil like Panko breadcrumbs. But, you won't know that by the box, if it doesn't say flakes on it, so you can use what you've got unless someone else has a brand name for ya! :-)

I can't wait till time change for all that natural light ;) Mr Piggy Panko is much courser than bread crumbs and give off a really good crunch. I prefer them personally for breading, but still use my good old homemade bread crumbs once in a while for meatballs ect. :)

    My usual "rule" for breadcrumbs, is Panko goes ON, fine goes IN.

    BS breasts read at 165F and moist after an hour. There is plenty of breading here to do another batch. Used homemade bread crumbs. Baked the clucker parts on a wire rack over a foiled lipped baking sheet.
    Plated it with rice simmered in collard green and hog jowl squeezings along with some Baked Lentils With Tangy Barbeque Sauce/saved and a Rum Berry Crisp for dessert.
    Removing the skin, Mrpiggy, is a personal preference. I did the breasts skinless and left it on for the drumsticks.
