Rum Berry Crisp
From keni 15 years agoIngredients
- 6 cups berries-frozen or fresh shopping list
- 3-4T white sugar shopping list
- 1 shot rum(I use Malibu)--can sub 2tsp almond, rum or vanilla extract shopping list
- 1 cup flour shopping list
- 1 cup brown sugar shopping list
- 1 cup oats shopping list
- 1tsp cinnamon shopping list
- 1tsp nutmeg shopping list
- 1 stick butter, softened, but not melted shopping list
- 3oz cream cheese, softened but not melted shopping list
How to make it
- Combine berries with rum and white sugar and toss to coat and let rest while preparing topping.
- Combine flour, brown sugar, oats, cinnamon and nutmeg.
- Add butter and cream cheese and mix(I use my hands) until combined. Batter will not be crumbly, rather it should hold it's shape if you press it together.
- Pour berries into shallow glass dish, or dishes, to form about a single layer.
- Drop batter over entire surface of berries
- Bake at 400 for 35-45 minutes until berries are bubbly and topping is golden brown.
- This is, of course, fantastic with vanilla ice cream or homemade whipped cream.
- The "Berry Rum" liquid that forms in the bottom of the pan makes a fun "shot"(no traceable alcohol is present, but it's tasty! :)

Wow, is right! This is my kind of dessert.
Typical man. I commented before reading the instruction... I thought the oats went into the berries to thicken the mixture. Now, I wonder...
Quick oats?
