These are SO GOOD!!!! I used some red potatoes and did not peel them. Wish I would have made more b/c they all got eaten up and there were not enough for seconds! Guess there was a smudge on my camera lens ;)

The recipe is called Bubble and Squeak a very old traditional English dish, earliest known recipe was by Maria Rundell in 1806. I've been making this for 35 years or more.

Isn't bubble and squeak traditionally made with cabbage? Maybe I am wrong, but that is what I am used to.

I honestly thought it was missing something from a bubble and squeak but couldn't remember what it was. So basically the cabbage in place of spinach on this one.

Apparently my non-stick skillet doesn't like this recipe. Did all I could think of to keep ingredients from sticking. Alas for naught. I know what hash browns are supposed to look like. Mine turned out mush browns. Good enough flavor.

I can't remember if mine stuck or not, I do have fights with my non stick pans too sometimes, so I'm sure mine did somewhat. Do remember this being very good though...
