Low Fat Tex Mex Egg Rolls

    A recipe from Laurieg Low Fat Tex Mex Eggrolls
    These were delicious! I loved the idea of baking as opposed to frying...healithier & still crispy:) You don't even miss the meat, there is so much flavor! I did add more red pepper flakes, because we like spicy:) I have never made egg rolls before this, there are so many different variations you can use for the fillings. Kindof makes me want to get a little creative! Thanks Laurie for this fabulous recipe! I'll be making these again (and again)!

    Note: Forgot to mention I made the cabbage mixture with all the vegs & seasonings eariler in the day and filled the eggroll wrappers right before baking..baked for about 30 minutes:)

    Geez, there are tons of pics posted for this. That looks fantastic, NP. Were they easy? I woulda added some extra heat, too. I see that it only takes 20 min, but to me it looks like an hour+?

    I actually did all the prep of the cabbage and all the vegs etc eariler in the day and put the filling in the eggroll wrappers right before baking..it was easy..didn't take long at all to prepare.I had to bake for about 30 minutes though since the filling was cold.an hour would be way too long of a baking time!! You can do it..there are pics on how to roll these on the recipe page...I think you would really love these!

    Janet, Thank you :) You could sub any beans I'm sure:) You could omit the beans and add something else..that's the beauty of this post:) I just love that there isn't any meat in these..:)

    Thanks Frankieanne! It was nice to prep everything early..and since it calls for the cole slaw mix instead of having to slice a whole cabbage, even better:) Rick is requesting some in his lunch.lol..they are even good cold:)
