I absolutlely love the Tex Mex eggrolls from the Cheesecake Factory, Hubby took one home and I disected it and made my own low fat version. I calculate them at 2 points each if you are following WW.

Ingredients
  • Green onions
  • bag of the cole slaw mix
  • cooking spray
  • small can of corn
  • can of black beans
  • can of diced tomatos about 14 ounces
  • cup of cooked brown rice
  • packet of taco seasoning
  • crushed red pepper flakes
  • salt and ground pepper
  • egg roll wrappers
  • peanut oil

Directions
  1. Spray a large frying pan or wok with cooking spray
  2. add green onions and cole slaw mix- cook until soft I usually spray the top of the mix a couple of times too after I put it in the pan so it doesn't stick
  3. add in corn, tomatos, black beans and cooked brown rice
  4. add seasoning and crushed red pepper. i used about a half a teaspoon but you can add more or less depending on how hot you like it.
  5. add salt and ground pepper to taste
  6. taste mixture to see if you need more seasoning, you can add some chili powder and garlic salt if you think it is too bland
  7. let mixture cool to room temp
  8. wrap in eggroll wrappers
  9. place eggrolls on cookie sheets that have been sprayed with cooking spray
  10. brush each one with peanut oil
  11. bake on 400 for 20-25 minutes

We really liked these! Fairly easy and quick to make. I would have liked to see more specific ingredient amounts listed.

Used Navy Beans in place of the Black Beans as Mr. Breezy refuses to eat the black (a childhood trauma). We are not vegetarians but did not feel we were missing anything as there were lots of good flavors to enjoy. Well, I shouldn’t say “anything” as Mr.B said they would be good with some cheese.

He suggested a cheese dipping sauce (made from Velveeta, of course -- see my bio and my group #1040). I think the dipping sauce recommended by LaurieG, the recipe poster, would be good.

Recommended dipping sauce:
Fat-free sour cream, low-fat mayo, Hidden Valley Ranch dip mix and a couple of tablespoons of Ken’s Buffalo Wing sauce marinade.

Overall these were a pleasant surprise and we will most definitely be making these again.

WOW! A great recipe! I'm saving this one to try..


Had friends over this after noon and made a few of these.. We ran out.. the guys were back from Dove hunting and wolfed them down.. Never missed the meat! I had to sub white rice... no brown in house.


These were so good! I did omit the rice though, but other than that followed the recipe perfectly! Why anyone would want to fry and egg roll after trying this recipe would be beyond me! They were so light and crisp and perfect! I served this with the Zesty Avocado Dressing from this site and it was the perfect combo! I also added some pics. to the collection....thanks Laurie!

Alterations


I added some roasted garlic because I had some sitting in the fridge. I liked it but then again I don't mind biting into a chunk of garlic...Vampires beware!


made these tonight and added some kraft fat free cheddar and fresh cilantro. Hubby said they tasted better with these additions.
