Low Fat Tex Mex Eggrolls

- green onions shopping list
- bag of the cole slaw mix shopping list
- cooking spray shopping list
- small can of corn shopping list
- can of black beans shopping list
- can of diced tomatos about 14 ounces shopping list
- cup of cooked brown rice shopping list
- packet of taco seasoning shopping list
- crushed red pepper flakes shopping list
- salt and ground pepper shopping list
- egg roll wrappers shopping list
- peanut oil shopping list
How to make it
- Spray a large frying pan or wok with cooking spray
- add green onions and cole slaw mix- cook until soft I usually spray the top of the mix a couple of times too after I put it in the pan so it doesn't stick
- add in corn, tomatos, black beans and cooked brown rice
- add seasoning and crushed red pepper. i used about a half a teaspoon but you can add more or less depending on how hot you like it.
- add salt and ground pepper to taste
- taste mixture to see if you need more seasoning, you can add some chili powder and garlic salt if you think it is too bland
- let mixture cool to room temp
- wrap in eggroll wrappers
- place eggrolls on cookie sheets that have been sprayed with cooking spray
- brush each one with peanut oil
- bake on 400 for 20-25 minutes

Had friends over this after noon and made a few of these.. We ran out.. the guys were back from Dove hunting and wolfed them down.. Never missed the meat! I had to sub white rice... no brown in house.
