Scrumptious Baked Chicken Parmesan

    I don't recall if I have ever made chicken parm... but this one was killer! The addition of the onion slices is nice...not sure if that's traditional?? But it was accepted greatly by us :) I did use a jarred sauce but a good one (My FAVORITE, Giada's Tomato Basil, good stuff) and I had cut my chicken breast to make halves so I cut back the time to about 30 minutes in total cooking time. I didn't make enough spaghetti for our leftover chicken parmesan (i"m horrible about measuring pasta!) So we ate them on sandwiches the next day! SO GOOD!! Looks like Keni made this one, but never reviewed....Frankie can yell at her when she gets back ;)

I thought Keni had reviewed it...but...that might have been in another group...I think she saw it in a group one time and made it...(CRAFT! lol).

As for the pasta, I have a weird thing about it...I HATE to make to much and then the extra never get used!! 1 lb. would have been too much for 2 adult and 2 kids portions so I usually try to use 3/4 the box but this time only think half went in...I know ...I'm crazy! Then all the left over dry pasta I throw in a tall container and use it when it looks about right..lol!

    I made this for dinner earlier this week and it was delicious! I used sweet basil Monterey Jack cheese which worked perfectly with this recipe. It was so simple, easy, and tasty! Will definitely make it again and I think I'll heat up the leftovers now for a late lunch :-)
