This is one of my first "creations"! Has been a regular in our house for almost 20 years! This recipe uses baked, boneless/skinless chicken breasts instead of breaded chicken. It's one of my boyfriend's favorites.

Ingredients
  • 4 - 6 med/large Boneless, skinless chicken breasts
  • Seasoned Salt
  • Garlic Pepper
  • Italian Seasoning
  • 1 med. white onion, sliced in thin rings
  • 4 - 6 pads margarine or butter
  • 1 (or 2 - depending on size of chicken breasts) Jar(s) Classico garlic & ripe olive Spaghetti Sauce (or Homemade Tomato Sauce)
  • 1 tub fresh whole mushrooms, brushed clean
  • 1 t garlic
  • 2 bay leaves
  • 2 cups shredded parmesan cheese, halved
  • 1 cup shredded italian blend cheese, halved
  • 1 package spaghetti noodles
  • Olive Oil
  • 2 T margarine
  • Kosher salt
  • *SAUCE note: I always make my own sauce for spaghetti, etc, but the jarred sauce works really well in this one, tastes homemade after being combined and cooked with the other ingredients. A real time saver!

Directions
  1. Preheat oven to 350
  2. Season both sides of chicken breasts with seasoned salt, garlic pepper, and Italian Seasoning
  3. Drizzle with olive oil
  4. Place in casserole dish and cover with lid or foil
  5. Bake 25 minutes
  6. Remove from oven
  7. Turn chicken
  8. Sprinkle half of each of the cheeses over chicken
  9. Lay onion rings on top of chicken
  10. Add pad of butter to each piece of chicken
  11. Smother with sauce
  12. Add bay leaves
  13. Return to oven, and bake until juices run clear - about 30 more minutes, depends on size of chicken breats (bake uncovered, or the sauce will be watery)
  14. While chicken is baking, bring large pot of water to boil
  15. Add a little olive oil, slight palmful of kosher salt and butter
  16. Add sphaghetti and cook according to directions
  17. (Most of the cooks on FN, etc. don't do this, but, I always rinse my pasta in a colander with cool water. I just don't love that starchy taste!).
  18. While pasta is boiling, brush mushrooms clean and saute in some evoo, butter, 1 t garlic,and white wine or white wine worcestershire.
  19. Remove chicken from oven when done, top with remaining cheese
  20. Layer noodles, chicken, sauce and mushrooms on plate.
  21. Serve with salad and great Italian bread with garlic & herb butter

I used to make one just like this... It was a weight watchers recipe... and it is good... you don't miss the fried chicken at all.. In fact I prefer it this way..

Hey Sparrow! Picked this up in the Recipe Swap...VERY good...I never buy jarred sauce,but I did look for your suggestion...to no avail, so I added sliced kalamatas to my own sauce...shredded my own Parmesan, Asiago and Mozzarella. I'm not a big fan of bay, so I'd prolly sub the fresh herbs next time, but that's just a taste thing. :) Thank you so much for the recipe and for playing in the Swap! (I added photos, if you wanna remove them, I understand :)
