How to make it

  • Preheat oven to 350
  • Season both sides of chicken breasts with seasoned salt, garlic pepper, and Italian Seasoning
  • Drizzle with olive oil
  • Place in casserole dish and cover with lid or foil
  • Bake 25 minutes
  • Remove from oven
  • Turn chicken
  • Sprinkle half of each of the cheeses over chicken
  • Lay onion rings on top of chicken
  • Add pad of butter to each piece of chicken
  • Smother with sauce
  • Add bay leaves
  • Return to oven, and bake until juices run clear - about 30 more minutes, depends on size of chicken breats (bake uncovered, or the sauce will be watery)
  • While chicken is baking, bring large pot of water to boil
  • Add a little olive oil, slight palmful of kosher salt and butter
  • Add sphaghetti and cook according to directions
  • (Most of the cooks on FN, etc. don't do this, but, I always rinse my pasta in a colander with cool water. I just don't love that starchy taste!).
  • While pasta is boiling, brush mushrooms clean and saute in some evoo, butter, 1 t garlic,and white wine or white wine worcestershire.
  • Remove chicken from oven when done, top with remaining cheese
  • Layer noodles, chicken, sauce and mushrooms on plate.
  • Serve with salad and great Italian bread with garlic & herb butter

    I used to make one just like this... It was a weight watchers recipe... and it is good... you don't miss the fried chicken at all.. In fact I prefer it this way..
