Slow Cooker Mexican Chicken Tostadas

    Very good and I like the way there are no beans in this just to lighten it up some, and we did not miss them either! I saved the jalapeno for topping at the end and cut back a touch with the chili powder just so the kids could eat it. I also made my own salsa. No photo, it was blurry :( but I will make again and get one!

    I finally got around to making this and I'm so glad I did! The combination of all of the garlic, jalapeno (I used 2) and lime juice really made this tasty...I used chicken breasts 'cause that's what i had. Used my tostada dressing (above) had to add a little water to it after it was made to thin, also in the dressing recipe the condensed milk can is 14 oz, so use half of that (7oz)... Posted pics to the recipe..Thanks Kimmer for the recipe & ML2C for letting us know how good this is!

    Thanks for the comments guys! This is one of my family's all time favorites and usually on my son Michael's "mom needs to make" list when he is home on leave. And yes..........I do use 10 cloves of garlic!!! But yes, with large or jumbo garlic, you would want to use less.

    Really enjoyed this! This was the first time I ever made Tostadas and also the first time I ever cooked chicken like that in the crockpot to shred. Very fun. The aroma wafting out of the crock pot was to die for. I had my Contractor here at the time and finally he broke down and said "What is that cooking....it smells AMAZING....can I have the recipe?" LOL! My Mom went back for seconds. :) I didn't tell her there were jalopenos in it as she insists they're too HOT! :) I just used regular old chili powder as I've never seen "Mexican Chili Powder" but I will keep my eyes out for it for next time.....there will be next times! :) Thanks Kimmer!

    Ok got a picture on there for you Frankie :) Used your Smoky Thousand Island Dressing on this as well as added tomatoes. I also left the heat at full recipes extent, nice and spicy (kids ate corn dogs, lol) Marie, your tostada dressing is next on my list when I make them again, probably a ground beef version :)

    Good flavor. Made enchiladas out of this recipe. Combined it with Spinach Chicken Enchiladas and made a White Salsa to go with the stuffing, which is more of a dip than a salsa. And whipped up another batch of Ricotta and Creme Friache.
    My tortilla making skill for corn tortillas is suspect. No pic. It looks like a plate of goo.
