Sparow64's Mesquite Chicken

    There was a FLAVOUR party going on in my BBQ last night! I made Lori's Mesquite Grilled Chicken In White Barbeque Sauce
    and is was AMAZING with a capital A. I will totally add this to our regular menu rotation. This recipe introduced me to White BBQ sauce which I had never ever had before. Loved the addition of the garlic and the horseradish. We always take the skin off chicken just to strive for a healthier meal and that sometimes results in a drier piece of meat. But you marinate the pieces for four hours before putting them on indirect heat in the grill plus the BBQ sauce envelopes them and totally seals in the juices so even the breast pieces were tender, juicy and oh so flavourful. You make up a tinfoil packet of mesquite chips and put that on the 'hot' side of the BBQ and you don't turn the chicken. Quite a nice recipe in that you just leave it alone and let it do its thing and you don't have to worry about flare-ups or burning. I admit to peeking once but did try my best to let the smoking process happen. And boy....the flavour of the mesquite really imparted to the chicken. I set aside some of the BBQ sauce to serve with the chicken once it was cooked. It was met with rave reviews by my hubby.

    I finally got to make this after being rained out a couple times. Well worth the wait!! I was afraid my coals would die before my chicken was done (used legs and thighs attached) by not cooking the chicken directly over the coals, so I spread the coals in a thin layer and topped with the soaked wood chips. I had to flip the chicken once. Skin was nice a crisp! The white BBQ sauce was a hit, and I was very surprised when my 4 yr. old ended up loving it and dipped his chicken and veggies into it lol! It's slightly sweet and tangy :) Made the mayo homemade for this. Thanks Lori!
