Monday's Marinade

    Good Morning Everyone! I have a Dr.'s appointment this morning and we have a couple of errands to run for Benjamin who heads off tomorrow to Taipei. I feel nauseous.
    Am making Benj his favourite fresh tomato sauce recipe over spaghettini for dinner tonight and I am going to make Corinne's
    Panko Crusted Pork Chops
    for Jim and I. Not sure of sides yet. Probably a baked potato.
    It's just gorgeous outside. Lots and lots of white fluffy snow. -4F.
    Glad to hear Fred is feeling better Tina. That's a good picture of him in your Avatar.

    Lori, Spaghetti is just the perfect meal in my mind for today.

    I am not certain yet what we are having for dinner and you both have me swaying between pork chops and spaghetti now!!! It is a sunny clear day and with all the snow it looks very beautiful outside. I am not up to very much today just dusting and cleaning and putting away the last of the Christmas decorations and stuff.

    I'll be busy again today with bookkeeping, bank run, I need to total our mileage for last year as well. That shouldn't take too long though:) So I sure hope I get a chance to watch Downton without any interuptions!!! Rick is busy most of the day..need to find a kitty-sitter..LOL Those rascals start acting up when I watch Downton for some reason!

    We popped into the bank and deposited a bit more money into Benjamin's account and got him a new pr. of ear phones as the ones we got him for his birthday were defective.

    BTW, I have some poblanos and leftover queso cheese from the chili..could I make these like Laurie's laughing cow pepper recipe? Or are they too large of a pepper..just wondering the best, easiest to make stuffed peppers with what I have on hand...thanks"_

    Tonight's dinner mini meatloaf cupcakes from Emilybites.com with a broccoli cheese side from green giant and maybe mashed.

Couldn't you just mix up some rice with the cheese and some spices, cumin, chili, etc. and even a bit of your favourite kale or whatever, onions and bake that all up? A bit of tomato sauce to make it all soft enough?
    That's pretty funny you forgot to serve the angel food cake Laurie. Equally surprising that on one else noticed you hadn't either! :)
    Again, everyone, I appreciate the thoughts. I know I'm not going to get much sleep tonight. We have to leave the house by about 6:30 tomorrow morning. I think I'm seriously going to bring a box of kleenex with me in the car. :) Once we get him through security Jim and I will go for breakfast and then Jim heads back to work. I'm meeting up with my girlfriend for lunch and I'd like to go find somewhere to get my hair cut. The hair dresser we've had forever retired. Very sad.

    Marie, here is a recipe Donna has for
    Cheesy Fiesta Poblanos
    I'm not sure about just using cheese and the peppers...BUT...if you had enhough cheese I don't see why not! And you could sub the queso for what she uses. Donna uses poblanos alot...here's another one
    Poblanos With Spicy Meat Sauce
    (you could use ground turkey)

    I spoke to a lady today that has been in the staffing industry for 20+ years. She advertised that she is starting her own staffing co and I sent her my resume. Maybe since she is just starting out she will be highly motivated to find a position for me! lol I should be a top priority. :) She has contacts from her years in staffing, so, we will see. Won't hurt to try.

    (Again, ground turkey would work).

    And would you believe I've never had chile rellenos? I know that Donna or Corinne, or both, have a recipe, but I'm not finding it. Still trying.

    Am making Benjamin's favourite appetizer. Spinach balls with Hot Pepper Jelly. Will pop a bottle of bubbly in just a bit. Dinner in front of the TV with our favourite Monday night line up. A fire. The regular every day things are what is most important. Always.
    Will close for today and you won't hear from me tomorrow morning. What a tough thing it is....letting go. Heavy heart. But I'm very proud. Night all.
