    Points, thanks for asking about Fred. He is physically doing better. Beginning to look like your avatar. He is completely sedentary and watches TV all day. He has no motivation and will not "do" anything but watch TV. Mentally, he has a hard time connecting the dots these days. He is happy to eat, sit, and watch the History channel.
    In lieux of roux....love the idea and love the ideas that so many discussed. Rocco's has a new cook book, kind of "Eat this instead of That" and it focuses on help.ing in eating healthier. I would love to see how the roux-subs work in mac and cheese. Love the idea of bacon and bread crumbs on top, along with the addition of cauliflower.
    Sorry about the roof leaks, Lori, I hope you find a solution.
    No furnace is not a happy situation. Best of luck on the repairs.
    It does get cold in FL, in gentle waves and usually not for great lengths of time. Last year was the "one in a hundred year" exception and I hope this year is more normal.

    Good Morning Tina! I really think that you should teach your child better priorities actually! LOL! The Group has touched a bit on your Husband Tina but for us newbies, did he have a stroke or what bad thing happened? Hope all is as good as you can make it. And I don't mean to pry.
    It is 7:25 a.m. here and it is pitch black outside and I mean pitch black. Almost makes me feel like I got my clock wrong and I'm up in the middle of the night by mistake. (Talk about GR addictions...LOL!)
    Benjamin is coming home this weekend. HURRAY, HURRAY! The three of us are going to do an overnight jaunt to Watertown, NY tomorrow to do a bit of shopping and sight-seeing. Never been there before.
    So for dinner this evening I am going to try out Corinne's
    Lazy Womans Chicken Kiev
    because as soon as I saw the recipe posted on the Homepage I knew it had my name written all over it. On the side I am finally going to get around to trying Dahlia's
    Cheesy Spinach Stuffed Tomatoes
    And for Benj I'm going to make a Swiss Cheese, Onion, Mushroom and Spinach Quiche.

    Ang, I'm so glad to hear that you are healing. I don't know all the back story, but darling, you have been in my prayers (Kim too). I dreamt I owned a restaurant called the "Karma Cafe" and it made me think of you. Of course, coupled with the Karma Cafe, was the next door restaurant called the "Dogma Grille" serving snappy hot dogs and that made me think of Corrine....which beget the silly name suggestion for her hot dog cart, "Dogma Carta". Okay, my word play is a little twisted but it a better dream than the IRS and mortgage companies mess I have nightmares about.
    Must have been the ginger in the stir fry to give me crazy dreams. LOL. Didn't post the stir fry, it is kind of a dump and wok recipe.
    Fred does not like brown rice, but he likes oranges and sherbert! So I kind of made up for his "dreadful" supper. He doesn't like stir fry much either. And he definitely doesn't like me trying to hide veggies in a perfectly good meat dish. So we'll see if that plan works out.

    Making smothered porkchops, with mashed sweets (a touch of thyme, butter and bacon salt. Brussel spouts with leeks and crumbled sausage. A pork overload to make amends for the "healthy" supper last night. Fred will be happy.

    Laurie, I agree with the Doctor, if GF makes her feel better, then keep it up. I have been trying really hard to cut back on sugars and gluten and my ankles are forever grateful. I even got to drop one of the BP meds from my litany of meds. So, if it works, keep at it. The swelling decreases dramatically when I stay gf and my blood pressure stays down.

    Fred had two strokes in April -08 and November 09, he had a grand mal seizure and spent weeks in a coma. He has recovered physically, but the mind suffered significant damage from lack of oxygen. He is content and happy most of the time, he likes sympathy, lots and lots of it. Can be demanding. Think 64 year old, with a bad case of terrible two's and you can see the daily challenge. Dear, no intrusion at all...and let me add that, I love hearing about Benjamin and I'm always happy to hear the "joy" in your posts when you write of him.

    My doctor in MA has finally put her foot down and told me no more medication so I've been forced to see a doctor here. I suppose after being here for 4 months, it's about time....Going today....UGH!!!!!

    My Friend is hosting one of those Houseparty.com parties this morning for Shutterfly so I will be partaking in Mimosa's LOL Hopefully they give some good couppons for Shutterfly because we use that site anyway and Rebecca has embarked on a new Hobby......Scrapbooking. She wants a camera for Christmas.
    Spoke to Becca about the Gluten and she says she would like to just have it in moderation here and there. Last night I made her GF Pasta and us regular pasta but I overcooked it and it was nasty so she had a small plate of regular pasta. She says when she eats gluten she feels starving all day long, which I think may be the carbs not the gluten but who knows. All we know is that her neck swells right back up with the gluten.

    Hi, Tina – Quite a meal you’ve got lined up for today! Sounds great – it’s been awhile since I’ve made smothered pork chops, I’ll have to remember to plan those soon. I’ve never thought to put leeks with my brussel sprouts, that sounds like an excellent idea. I’ll have to make a note of that to try as well. Couldn’t add the sausage though (although it sounds good to me) as my beau doesn’t like to eat pork sausage. Weird, I know!
    Hey, Janet! Here’s hoping you have a better day today than you did yesterday! :) I’m sure knowing that your son is coming will make the day fly by and put a positive spin on everything. Dinner sounds awesome – I cannot wait to try Wynne’s chicken kiev! Thanks for the tips last night on Lori’s chicken – I had read those in her post and I was brushing the “sauce” on the first chicken breast and my little one got so excited and wanted me to let him do it, so of course, I did. That may be why we had a bit of a thick coating and slightly uneven on the chicken. But I’ll take it because he had a great time – I love it when they want to get in there and help me out and when they have such fun with it!

    Have fun at your party, Laurie! Pizza sounds awesome too! I think your daughter is smart to keep eating GF; whatever makes her feel best is the way to go.
    “The man” mentioned dinner and a movie tonight, so I may be dining out. He’s been known to change his mind though – so we’ll see…I may end up throwing a dinner together on the fly! I’ll keep my fingers crossed for an evening out though – it’s been awhile!

    A bit of good news at work this morning...(insert smirking sarcasm...) the new girl, whom I have lovingly dubbed "007" has been out "sick" for 2 days...she quit this morning. Soooo...did you just HAVE to lie about me to the resident dragon lady and cause me some grief in your week and a half of employment?????? *shakes head and rolls eyes*
    I keep having to answer the phones and do a little work, so I'm sure several others have been here since I started my post...
    Contractor working on the leak sometime today...not sure how long that will take or how big of a job it will be once he gets into it...may have to even take some of the siding off...so don't know about supper. Bryan said not to defrost anything. "We'll do something" were his exact words...not sure what that means, though. lol Tomorrow we are going to the fall festival and chili cookoff downtown, and he has a card tournament Sunday, so, easy peasy for me this weekend.

    Hi Brooke! It is awesome when your children take an interest and get excited about food preparation. I always used to let Benjamin help me in the kitchen and as you say, it was an awful lot of fun (How cute was he when he was flipping his first egg standing up at the stove on a chair...man...) plus....he knows how to cook now and is pretty darn good at it. It's an all over positive thing indeed.
    LOL on '007' Lori. That is a very similar situation to my 'bad day' from yesterday.
    Glad to hear the leak is getting fixed. Hopefully it won't be a big job in the end. The Fall Festival and Chili Cookoff sounds like an awful lot of fun!

    Hey Laura, Marie, and anyone else I missed...

    Got some chicken stock simmering to reduce - made a huge mess of it on Wed from my carcass from Sunday night's roasted chicken. Freezing 2 qts and still have a pretty big pot of it. Not sure what I'm making with it though. Considering a cheesy cauliflower thingydo after reading all your posts about using cauliflower instead of roue. Might throw in some chicken for protein too. Well, true to form, I got called away for a spell... so I've probably missed a few new posts by now... Geez

You can arrange the photo's yourself your have the site do it auto. They gave us all a voucher for a free photobook. I am saving mine and going to put one together for the in-laws for Christmas.

    Donna, glad you're back! Missed you. Thanks for asking about my hair and you too Brooke :) I actually did something different today. I got the roots retouched with the color I've been doing for a while (darkest brown before black) but my hair is stick straight and though I don't mind it I've never really had it wavy or curly so my girl curled it and sprayed it and it lasted a coupe hours to my surprise but then I went shopping with my girlfriend and tried clothes on so that probably didn't help. I did manage to snap a pic with my phone and send it to my beau so he could see..

    Dinner out was good - had a nice glass of wine, some spinach & artichoke dip appetizer and steak medallions on top of fettucine with a gorgonzola alfredo sauce with spinach. It was very tasty! I'm very full though and ready to relax.

    Dahlia....my son's first comment upon trying your Cheesy Spinach tomatoes was "They're fantastic". That's pretty good praise if I must say so myself! And Corinne....that Chicken Kiev recipe was really nice. I have so much chicken left over, its amusing. the chicken breasts I got from my local farmer are HUGE! What a laugh! Even without the garlic butter addition the chicken recipe itself is really nice. I am looking forward to using the leftovers in all sorts of ways. Infact, I snuck a piece out of the fridge while we were watching "Glee". It's soooo good. My husband actually got a craving for "Lobster" as we were eating, as the garlic butter reminded him of Lobster served the same way basically. Very nice and I so thank you. It's really cool to try different recipes and sort of know who they came from and they are tried and true already. Love it.
