What's cooking Wednesday?

Good Morning Everyone! It's an absolutely gorgeous day here in the Ottawa Valley!
How did you make out with your MIL shopping yesterday Corinne?
I didn't get a chance to shop for light fixtures. However...I did have great success clothes shopping believe it or not. As I've said in the past, it's a job I really don't like to do, so I tend to go in once or twice a year and just get it over with. Got some really pretty Clark's sandals. I love them and they feel comfy except for the fact they have that piece of leather running in between my big toe and the next one. Like flip-flops. I haven't worn a shoe like that in a long time so I'm worried that might bug me. But we'll see.
Benj and I met up with my girlfriend and went to the cutest place for lunch.
    http://www.theteapartycafe.com/index.php?option=com_content&view=frontpage&Itemid=1
I also bought a little package of Berry Herbal Tea that smells devine! Hopefully it tastes just as good! My girlfriend returned recently from a Mediterranean Cruise and she brought me back the cutest little leather bracelet with little charms on it (an owl, a peace sign, etc.) from Barcelona as well as a little bag of "Herbes de Provence" from Nice. I was very tickled!
Jim and I went for dinner at
    http://ottawa.darcymcgees.com/
I just had Fish n' chips and Jim had Chicken Tikka. It was good.
I too haven't made Salmon Patties in forever. It's something I used to do fairly often. And all that talk yesterday Jett of Banana Pudding...wow....all of those ideas were soooooo yummy looking!
Yes Marie, Jim and I too sooooo want to do a Napa Valley Wine Tasting Tour. It is very high on our California priority list! So glad to hear your Dad is doing better! :)
With all that mention of fresh mint Laura I instantly think of Souvlaki. Do you ever make that?
Your Fiesta Lasagna Ole sounded really neat Lori! A Mexican spin on an Italian favourite. The things one can learn! :) DID YOU FIND THE REMOTE?:)
We'd never been to the Hotel Kenney before Joce but it was so picturesque that I'm going to try get my Mom and her cousin there next week when they are visiting. It's just jam packed full of character. The House Warming Gift you gave your SIL sounded so nice! How thoughtful! And double-wow on your dinner at the Shallows Grill. It sounded FANTASTIC! And so did your Prime Rib! I still have not mastered Prime Rib and I love the stuff!
Tina...how are you doing? Any more late nights this week or are you done with that? I don't know how I missed it but I'm glad I went back to copy and paste that link to the Asian Rock Cornish Game Hen but I just, just saw the link to that Chana Dhansak. Thank you so much. That totally looks like something Benjamin would go over the moon with!
Okay...everyone do a big Beach Wave to Laurie in Mexico! :) "HI LAURIE!"!!!!
Oh right....dinner....LOL! I'm going to make
    Chicken Lickin Good Pork Chops
    for dinner this evening.
    And
    Broccoli Casserole
as a side. Don't know what I'm going to make for Benj yet.
Pic below of the view outside the Hotel Kenney when we were there Monday. A lovely cruise boat was going through the locks while we were there. Pic in my Avatar of the front of the Inn where we were this past weekend.
    Have a great day everybody!

Janet, sounds like retirement is being good to you....Kudos on your shopping trip. Hope you can get used to the new sandals.
Hot again today so I'll make supper on the grill...Chipotle Burgers and Grilled Garlic Potatoes

    Gooood Morning!

Congrats on the shopping, Janet! I love Clarks! I used to hate any sandal with the thong, but, now, I wear them all the time. Just don't wear them out somewhere all day, the first day. Get used to them gradually and you should be fine. Both of the restaurants you went to yesterday sounded great! That Tea Party Cafe is too cute, and I love the Mad Hatter from Alice in Wonderland on their sign. I think I'd like the grilled veggies with goat cheese sandwich! THink I need to try that at home! : ) Couldn't get the other menu to load, but looked like a fun place. I will try again later. Came in to the office to no phones and no internet, so it's probably my server. The bracelet from your friend sounds like something Hil would love!! When we were out last week (or was it the week before? lol), she liked this cute little multicolor braided bracelet, with charms, that was on clearance. I kept trying to get her to go to another dept, or anything, so I could buy it for her birthday in June, and of course she wasn't taking the hint. lol I think I bought it without her seeing it...but...if she did see maybe she will have forgotten by then. She never said anything. lol OH, yeah, I finally found the remote. Made up in the bed. ON BRYAN'S SIDE, mind you! lol I did a couple of passes and never saw a lump! The pix are just gorgeous. Can't wait to see more from your trip. It really does sound like you are enjoying retirement. Has it sunk in, or, do you just feel like you are on vacation? : ) Dinner sounds excellent.

UGH Corinne...I hate when that happens! Your supper sounds fantastic, too! MMMm love those taters.

No cooking tonight, we need to eat that lasagna. It was HUGE! I kinda screwed it up...but...it's edible. I had more meat than usual, and I had a typo in the amount of liquid...calls for too much...I gotta go fix it...and I had less tortillas than I thought...so...fewer layers with too much liquid made the tortillas swell up and have and odd texture. Not sure how I will fix it...maybe throw it in the skillet? Scrape everthing else off of the tortillas if I can, and put it over chips for nachos?

Going to Donna and Garys for dinner tomorrow night, and the other couple that runs around with us will be there (Randy and Brenda). They didn't get to go to the derby, so, we are showing them our pix, and maybe plan a weekend with them in the future. I am thinking I will make
    Fruit Pizza
to take, but, not sure how it will do if I make it in the morning. I've had this thousands of times, it's a potluck staple here in the south, but, never made it. I think as long as I don't use bananas or anything like that it will be fine? ?? I have never had it with the glaze mixture poured over...I'm not sure that would work all day in the fridge? What do you think?

Hope you are having a blast, Laurie and Dahlia!

HEY to all not here yet! Happy Hump Day!

Good Morning Corinne! Your dinner sounds awesome! You know....I think I could eat burgers four times a week no problemo! :) Those potatoes also sound delicious!
Glad to hear you think I can manage the new sandals Lori. LOL. They are really cute and the bottom is so comfy but that thong thing is just feeling weird. I'll practice! :) The Tea Party cafe was adorable. I had the Tomato, pepper, brie avocado sandwich with Lentil soup on the side. It was excellent. Hil's bracelet sounds cute! I'm not a huge jewellery person so I was pleasantly surprised how bang on my friend's choice was. She had come across this young woman in a Craft stall in a Market making them and so actually watched her as she made the one for me which I think is very cool. ROFL on the return of the Remote. I knew it was Bryan's fault all along. LOL! It hasn't really, really set in yet that I don't have to go back to work. I kind of grooved a bit Monday evening as my initial thought after the Long Weekend was "Aaawwww....I have to go back to work tomorrow", but then...I realized I actually didn't have to and indeed I did a little happy dance in my head. :) I think your Lasagna mixture over Nachos would be awesome! Good idea! Sounds like a fun night planned with your friends. I love that Fruit Pizza idea. I bookmarked it. I've seen Fruit flans in Bakery windows that appear to keep nicely refrigerated for some time. And ya...I'd skip the bananas. And it actually says to cool the whole thing once you've poured the glaze on top in the fridge for an hour so I can't see that longer would be a huge deal? Worst case scenario is that the sugar cookie dough would get a bit soft like cake consistency and that's not a bad thing.
And speaking of cake....I saw this recipe on the Home Page this morning. Isn't that fun!
    Boozy Birthday Cake Shots
    I'd love to try that.

I did also have a nightmare the night before last about work. I dreamt I popped in to the store for a moment to pick something up and then someone asked me a question about how to do something and then a customer asked me to help them find an item in the Paint room and then when I looked up at the clock I realized I had been there for the whole entire day and I felt like an idiot! :)

LOL at the dream, Janet...that's too funny! I love it when I think I have to go to work and I really don't! (Not that it happens very often for me...). I think you may be right about the glaze...it should be fine if I do it in the morning, as opposed to tonight. Strawberries, blueberries...maybe some kiwi. Yep, that's the ticket!

    How's the kitchen coming along?

The kitchen is coming along well thanks. Our contractor was out yesterday and got a lot of the painting done. Today he is going to do more painting and then re-install the trim around the baseboards and doorways and such. There's still a good sized list of things to do but it's all pretty much finishing things. I suspect he'll be done by Friday and then we just have to wait until next Friday when the counter top gets installed and then the sink and faucet can go back in. At least the dishwasher is reconnected so I only have to wash up big pots and such outside on the deck.
Hey Marie....I just read this hilarious article in our local paper telling about four tons of marijuana that was found floating in the Pacific ocean off the California coast south of Los Angeles. What a laugh. The end paragraph reads "There has been no reports of pot washing up on California beaches". ROFL!

My Mom and her cousin Betty actually. I think Betty is 82 or 83 but you'd never know it. They both arrive next Tuesday and Mom is staying until the following Wednesday, June 16th and then Betty is here until the 12th of June. I've been doing a ton of planning for their visit, things to make them to eat and places to bring them to shop and sight-see. It will be very busy on the heels of all the excitement we've had here already recently but it should be fun.

Janet, You had another fun filled day yesterday again! Pleased you scored some clothes and new sandals too! I am not fond of clothes shopping either but shoes are another thing. You will get used to the thong between your toes it just takes a bit of time. LOL it is mostly psychological for a bit and then you forget it is there! The Tea Party looks like a really cute place and your soup and sandwich sounded so yummy! It is nice to see what they have done to the old houses in the market area too. Darcy Magee's looks like a cool place also and I haven't had fish and chips in ages either. What neat thoughtful gifts your girlfriend gave you. LOL I still dream I am at work or I am back in school! Nice you are down to the finishing touches on the kitchen and only a week to go when woo hoo! Broccoli Casserole and Chicken Lickin Good Pork Chops sounds great to me for dinner. Oh before I forget this is a link to a Hotel Kenney video. It has a splendid history and been in operation since 1877. Unfortunately Joe Kenney sold it a year or more ago after it had been in the family for 3 generations. None of his children wanted to continue to run it but the fellow who bought it is well known in the area and is keeping it the same. Joe is in his 70's and he and his wife wanted to retire and relax a bit in life and I can't say I blame him they worked very hard in their Hotel. I think your Mom and Betty would really seeing enjoy it and you will be in that area anyways. Here it is!
    http://www.hotelkenney.com/
It is a bit long a good video and hope you like it:-) LOLROFL no pot running up the beaches:-)

Corinne, Burgers and garlic potatoes are just right for your weather:-)

Lori, LOL I thought the remote might be in the bed on Bryan's side too! Sneaky you buying the bracelet for Hil as a birthday present. I am sure she will be surprised. I bet your lasagna will be better today and you will figure out what to do with it. The fruit pizza should be O.K. in the fridge all day they say put it in the fridge for at least and hour or two and the glaze should harden up somewhat when it is cooled or seal the fruit very well to keep it fresh tasting. LOL Good Mother's advice:-)

I didn't get everything I wanted to get done yesterday bc of the heavy rains. So once again I am going out to pick up what I left behind yesterday and then going to Foodsmiths to shop as I am out of a few things. I want to try a few of Jo_Jo_Ba's recipes and they should have the different ingredients I need. I want to try her homemade ricotta cheese first and a few other recipes she has with different ingredients. I am making a different sort of Malibu Sizzler for dinner which I make all the time. I stuff the chicken with ham, and cheeses
and cover with panko crumbs and throw it in the oven. I better get moving as I have much to do.

A big high 5 to everyone!!!

Chana Dhansak. Yeah, Janet, Glad you found the link, it looks incredible and it is on my plan to make. I'm beyond exhausted, read the thread and can't remember my own name. I answered and entered 138 emails today in addition to phone calls. I'm beyond tired and carelessly twisted my knee leaving my desk and can't walk. I have snacked on apples for dinner. Liv tells me she posted my packages to Lori and Corinne. Please tell me she didn't mix them up and you get what you are supposed to get.
Got a couple of dogs wrestling and the tussle is making me nuts..my patience level is zero. I just feel defeated. too much too do. Was told I HAD to work overtime on Tuesday till 6:30 after the holiday or I forfeit my holiday pay. WTH??? Thank you BAIN Capitol. Your management strategy drove us into bankruptcy and we are working on skeleton staff and you take away Holiday pay unless we work OT. And you can take away hours without repercussion. Thank you Bain. You rock. Corporate Wallstreet America strikes again. Ugh.
Doctor is going to shoot me. I've had to cancel two appts. because mandatory OT and she can't believe that I work in such conditions. Draconian, at best.
Truly i can't remember what i read...I hope Dahlia is having a blast, as well as Laurie.
Kitchen progress sounds good. Lori you are the better woman if you can hide something from Hil. Sounds wonderful and a great gift.
Janet, it took me three tries to find a spot for the dinner plates and silverware on the kitchen rmodel. The first that we lived with for 8 years was not functional...at all. This reincarnation is better, but we still walk to the old spot to find the silverware....habits are hard to break.
Lori, love the post, love the chuckle. You can fix the Ole, I have faith.
Joce...I forget.....oh yeah...homemade ricotta???? do tell? and sorry the weather killed the day for youl JoJoba has some good recipes, but i don't always have the stuff she uses on hand. Good for you. Homemade Ricotta!!!!!
Corinne, throw a burger south will ya? chopotle burgers sound aweesome.
Laura, gentle thoughts for a good week for you.
to our lurkers....Happy Hump day. Stick a fork in me I'm done. Ate my lunch for supper didn't have time to eat the lunch, so it came home and became supper.

    Hi all
I have been trying to read and catch up but there is a lot going on! My computer died but we got a replacement so things should be back on track now. Cooking has been hit and miss here lately because I had an allergic reaction to the sun which has kept me pretty much out of commission until this past weekend. Thanks to heavy-duty antihistamines things should be back to normal soon.
Last night was perogies with honey garlic sausage, onions and two kinds of mushrooms - very tasty and totally NOT on the diet plan. Tonight we watched Laura play rugby in the last game of the season and then stopped for pizza on the way home. Starting tomorrow, back to healthy meals again.
Sounds like lots of warm sunny weather for most - we have had rain for several days now and more to come. I am dreaming of warm weather (but no more sun for me!!!).
    Have a great night all
