Always looking for ways to use chipotles and came up with this burger....My favorite

Ingredients
- 1 lb. ground beef
- 1 chipotle in adobo, finely chopped with 1 tsp. of adobo sauce
- Salt and pepper to taste
- 4 slices of pepper cheese ( Use either pepper jack or as I've found recently, Land of Lakes pepper cheese)
- 4 hamburg buns
- Toppings
- sliced onion
- jalapeno rings
- sliced tomato
- sliced red onion
- sliced avocado
- Chipotle Aioli (posted)
Directions
- In mixing bowl, combine ground beef, chipotle, salt and pepper
- Form into 4 patties
- Grill over medium high heat until desired doneness
- Toast buns
- Add cheese to top of burgers when almost done
- Top with toppings
- Spread with Chipotle Aioli

Hey Wynne, I did make these last night - used 2 chipotle chiles cuz I had a 1.5 lbs. of ground beef. They were delicious. Made 5 burgers so I have 3 leftover in fridge - you know what I'm having for lunch today! Good stuff! ;')
