Cornflake Chewies Recipe
Most people that grew up in my hometown will tell you they loved these as kids. I was so glad to find a recipe in an old community recipe book - my son will love them, too!

Ingredients
  • 6 cups cornflakes
  • 1 cup sugar
  • 1 cup clear Karo, or other light corn syrup
  • 1 Tablespoon butter
  • 1 tsp vanilla extract
  • 1-1/4 cup smooth peanut butter (or to taste)

Directions
  1. Pour cornflakes into a big bowl.
  2. Combine sugar and syrup. Heat on low, stirring constantly, until sugar is melted.
  3. Remove from heat; stir in butter and vanilla.
  4. Add peanut butter and stir well.
  5. Pour mixture over cornflakes and stir gently until well coated.
  6. Spread in baking pan (13x9 for thinner pieces, 8x8 for thicker).
  7. When completely cool, cut into squares.

These are sooooo good - we like to frost ours with a melted Hershey's bar or melted milk chocolate chips, too. You have to taste these to see how good they are!!


Sigh... this brings back memories...


This recipe brings back such wonderful memories of my dear, sweet grandma! She would always make this delicious candy for me at Christmas! Ah, the good old days!!!


A wonderful lady at my childhood church made these and I loved them! She would make them as a "drop cookie" instead of a bar. Thanks for posting!
