Will try this on Grandkids. I know they will love it. Can you make and wrap then freeze? That would be cool. Have a bunch made up on hand. You have a money saver here.

O ya, everyone would love this! We have such a problem with brownie mixes...they always come out goopy. I wonder if doing them this way would help that?

Ok, reporting in on these. I won't extoll the virtues of taste on these; that part is as individual as the ice cream and brownie mix one chooses--and of course, you can imagine how wonderful they are!
I do have a couple notes:
1) Very important to line your baking sheet with a Silpat (silicone baking mat), parchment or even waxed paper. It would be impossible to grab them up with a spatula otherwise---they are complete stickers-to-the-pan...I used a silpat and was pleased with removing them as soon as they were almost room temp.
2) Do make sure they're "done" but not dry. A bit of softness in the middle is desirable.
3) Let your ice cream soften just a bit but not to the runny stage.
4) I wrapped mine individually so the guys could grab and go
5) SIZE: A tablespoon of dough is excellent--they do spread. More than that will yield a big ol' honkin sandwich. A tablespoon of dough yields a sandwich about 3 inches across--perfect size.
Giving these a high 5! Thanks for a goodie, Wynne!
