This made delicious use of the two large Golden Delicious apples I had left in the fruit bowl. Since I used 2 T. of salted butter, I omitted the salt from the topping. It just seemed like too much trouble to me to melt such a small amount, so I used a pastry fork to cut cold butter into the dry ingredients, as you would for any streusel topping, until the whole mixture resembled coarse crumbs. I made the topping first and set it aside for the few minutes it took me to peel and cut up the apples, so I didn't use the lemon juice to keep them from turning brown and they were fine. Instead of using two individual baking dishes, I put all of the cut up apples in an ungreased 5-1/2 inch square baking dish. That increased the bake time slightly, but I preferred using a single dish instead of two smaller ones. We topped our servings with vanilla ice cream - yum! The best part is, there are no leftovers to tempt us with extra calories. Thanks for sharing your recipe, Krumkake. Added to the I Made It II group on July 17, 2017: Apple Crisp For Two

It doesn't get any easier than this and the ratio of ingredients is perfect! I often don't want to make a huge dessert and found this recipe ideal for when you want something and too something on the healthier side. There was plenty enough making just one for DH and I to share.

Great idea, Krum! Although, you could just have some more for breakfast the next morning, and then for a mid-day snack, and then some more after dinner...LOL.

We love apple crisp. This recipe is similar to my silver spoon pie. Can't eat it without ice cream on top .... yum. It's that time of year to start using the oven. :^)
