Elaines Skewered Salmon and Whitefish with Steak ---

- ½ lb wild Pacific salmon fillets shopping list
- ½ lb Whitefish fillets shopping list
- ¼ lb beef fillets shopping list
- ½ lb chinese noodles (vermicelli) shopping list
- salt & pepper to taste shopping list
- 1 cup chicken broth shopping list
- lemon wedges or ‘Real Lemon juice’ to taste shopping list
How to make it
- Place the fillets on top of parchment paper.
- Place beef fillets in a separate piece of parchment
- Cook both together as illustrated…. @ 325*F until fish is opaque and beef is tender
- In the interim, cook the vermicelli in the chicken broth until tender.
- Turn the pieces of fish an beef only once.
- NOTE:
- The reason I cook these in separate parchment piecies is to prevent allergy crossing ... some people are allergic to beef, and some are allergic to fish.
- This method ensures even cooking without danger of cross-contamination of either ingredient.
- Served on a bed of fresh Vermicelli, this dish is a hearty, healthy, delicious main!
- Veggies alongside could well include leafy greens, with fresh carrots…….. your imagination is the only thing you need!
- ENJOY!
- NOTE:
- Vermicelli can be boiled, deep-fried, sauteed ........ whatever you desire.
- In this recipe, I cooked it in chicken broth.
