My friend Steve mother Dolores gave me this recipe. She said she got it from the Chicago Sun Times many years ago
Ingredients
- 4 lbs potatoes shopping list
- 1 large onion shopping list
- 3/4 lb bacon shopping list
- 1 small can evaporated milk shopping list
- 6 eggs shopping list
- salt and pepper to taste shopping list
How to make it
- Peel and grated potatoes and onion
- Cut bacon in small pieces and fry pour fat and bacon into potatoes mixture
- Beat eggs add to the mixture
- Add milk salt and pepper
- Mix well
- Pour into a greased pan and bake At 350 f for 1 hr 15 min or until top is light brown
