Baked Onion Rings

- 1 1/2 Cups Cornflakes shopping list
- 1/2 Cup plain breadcrumbs ( dried) shopping list
- 1 egg shopping list
- 1/2 Cup Low Fat buttermilk shopping list
- 1 Medium onion ( Vidalia, Spanish) Sliced and broken into rings shopping list
- 2 Tbsp. olive oil shopping list
- 1/4 Cup All Purpose flour shopping list
- 1/8 Tsp. cayenne pepper shopping list
- coarse salt and pepper shopping list
How to make it
- Preheat oven to 450 Degrees
- In a food processor, pulse breadcrumbs and cornflakes until fine crumbs form, then transfer to a medium bowl
- In another medium bowl, whisk together egg, buttermilk, flour, cayenne, and pepper
- Dip onion rings into egg mixture ( letting excess drop off ) and dredge into cornflake mixture; place on a large platter
- Pour oil into rimmed baking sheet and heat in oven for 2 minutes
- Remove sheet from oven and tilt to coat evenly.
- Arrange rings onto sheet. Bake for about 15 minutes turning once or until rings are golden brown.
- Season with salt.

Thank you for this. I love onion rings, but I am not ALLOWED the fat any more. Heart issues! And my disabilities keep me from enough exercise. so this gives me back one of my favorites and keeps my doctor happy!!!
