Not your regular mac and cheese...rather, 7 magnificent cheeses with macaroni for this classic Southern comfort food! Warning: You may eat the whole pan full before you realize what has happened!

Ingredients
  • 3 1/2 cups large elbow macaroni, cooked per package instructions, makes a lot for a 13 by 9 inch baking pan greased with 2 tablespoons butter
  • 1 1/3 cup heavy cream
  • 1 1/3 half and half
  • 2/3 cup sour cream
  • 4 oz cream cheese
  • 1 egg
  • 3 tablespoons flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dry mustard powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon nutmeg
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 12 oz Velveeta cheese cut into 1 inch cubes
  • 10 oz Vermont Cheddar cheese, cubed
  • 15 oz Gruyere cheese, shredded
  • 1 cup Jack cheese, shredded
  • 1 cup Yellow cheddar cheese, shredded
  • Paprika
  • 1 tablespoon fresh or dried chives, chopped
  • Sprinkle with fresh grated Parmesan

Directions
  1. Preheat oven to 350 degrees
  2. Grease a 13 by 9 inch nonstick metal baking pan with 2 tablespoons butter
  3. Pour the cooked pasta into the greased baking pan
  4. In a large mixing bowl, combine the heavy cream, half and half, and sour cream
  5. Break the cream cheese into little bits with your fingers and add it to the bowl
  6. Add the egg, flour, Worcestershire sauce, garlic powder, onion powder, mustard powder, cayenne pepper, nutmeg , salt and pepper
  7. Whisk with a wire whisk to break up the cream cheese, but it will still be lumpy!
  8. Starting at the corners of the baking pan, place and push down the Velveeta and Vermont White Cheddar cubes, working your way toward the middle
  9. Sprinkle the Gruyere evenly over the top
  10. Pour the heavy cream mixture over the cheeses, covering all areas, and shake the pan gently to distribute evenly
  11. Sprinkle the Jack and Cheddar cheese ober the top
  12. Sprinkle with the paprika
  13. Bake about 30 minutes or until top gets brown and bubbly
  14. Remove from oven and garnish with the chives
  15. Have the crowd ready and serve hot!

That is comfort food at its best! Everything is always better with a sprinkle of Parmesan (well, most everything)! I would give you twenty forks for this if I could. This makes the cheese lover in me very, very happy!!
