  • 5 lbs small beets - golf ball sized or smaller
  • 3 Tbsp-1/4 cup Balsamic
  • 2 Tbsp olive oil
  • 1 tsp coarse salt
  • Freshly ground pepper to taste

Directions
  1. Fire up your BBQ to max.
  2. Dump the unwashed, unpeeled beets directly on the grill and close the cover. Roast for 8 minutes, turn and continue for another 8 minutes.
  3. Remove the smaller, charred ones and continue roasting the larger ones until all sides are nicely blackened. (If using large beets, adjust cooking time accordingly.)
  4. Remove to a large bowl and cover with plastic wrap. Let sit for about 30 minutes to ensure the skin comes off easily.
  5. Rub the skin off with your fingers - this will stain so wear gloves if you care. DO NOT RINSE UNDER WATER. You will wash all of the flavour off. If there are still little bits of char, they will add to the flavour.
  6. Quarter them into wedges and splash with the balsamic and oil.
  7. Season with salt & pepper to taste
  8. Enjoy these beets while the season is still young and the BBQs are still out but alternately you could roast the beets in a large covered roasting pan at 500 degrees for 15-20 minutes or until tender.

We used to roast beets, potatoes, and other root vegetables when we could still burn leaves in the fall. The whole neighborhood would join the feast. Too bad the city had to kill the fun!!! Great recipe to bring back the memories!

I am a bit scared of beets, because of the color.. but this looks yummy.
