Skillet Sheperds Pie

- 1 pound of lean ground beef -I used 93% lean shopping list
- 2 teaspoons of oil shopping list
- 1 large onion for 1 cup chopped shopping list
- 2 tablesoons of ketchup shopping list
- 1 tablespoon of worcestershire sauce shopping list
- 2 teasboops of minced garlic (I used the prechoped kind) shopping list
- 1 cup of frozen peas shopping list
- 1 beef boulion cube ( I have used chicken) shopping list
- 1/2 cup of water shopping list
- 1 tablespoon of cornstarch shopping list
- 1 package of (20 ounces) of refrigerated mashed potatoes like simply potatoes brand shopping list
- 1 tablespoon of butter or margerine shopping list
- 1/2 cup of reduced fat sour cream (regular will work too) shopping list
- 3/4 cup of shredded cheddar cheese shopping list
How to make it
- Turn on broiler
- heat oil in a 12 inch pan ( I used a 10 inch CI)
- coarsely chop onion and add to skillet
- add beef (its okay if its still a little frozen)
- raise heat to high. Cook, turning and breaking meat until it is crumbled and brown. While the meat is browning, stir in Worcestershire sauce, ketchup and garlic
- cook potatoes according to directions
- when meat is browned add in peas,reduce heat to medium-low and let simmer
- meanwhile, combine boullion cube and water in a microwave safe cup. Microwave 1 minute to disolve the cube. Stir the cornstarch in briskly until it is well blended.
- Pour the cornstarch mixture into the skillet and stir well.
- Continue to simmer, stirring occasionally.
- Meanwhile finish microwaving the potatoes add in butter
- stir in the sour cream into the beef mixture
- spoon potatoes over the beef mixture and spread them to within 1 inch of the skillet sides.
- sprinkle cheese over the top and broil until the cheese is melted and bubbly, 2 minutes
