How to make it

  • Preheat oven to 375 degrees.
  • Place chicken in baking dish and drizzle evenly with honey and mustard. Sprinkle with lemon pepper.
  • Bake chicken 25 mins. Top each breast half with 2 bacon slice halves and sprinkle evenly with cheese. Continue baking 10 mins or until chicken juices run clear,bacon is crisp and cheese bubbly. Enjoy!

    Made with honey this time (see review below) and used garlic powder, paprika and s&p instead of lemon pepper and it was awesome! I marinated it in the sauce for a few hrs before baking too. There is plenty of sauce for 6 chicken breast halves!

    I changed it up and used Maple syrup instead of honey and cut it down to a 1/2 cup, and the mustard to a 1/4 cup. A great change up! More info about what I did here: Honey Mozzarella Chicken

    My dinner tonight in memory of Pat. I didn't have chicken breasts on hand but had some boneless skinless thighs so I cooked them for about 15 minutes before I added the honey and mustard. I mixed the honey and mustard together before putting it on the chicken. This was fabulous. I took some of the sauce and put it on my rice. Could just taste the lemon pepper. I cooked mine for 12 minutes after I put on the bacon and mozzarella because I like my mozzarella really cooked and crispy so someone else's results may look different from mine. Added my picture. Thanks, Pat. You always had the chicken recipes, that's for sure! I'm sure going to miss them and you.
