Tangy Asparagus Linguini

- 2 T. butter shopping list
- 1/4 c. onion, chopped shopping list
- 3 cloves garlic, chopped shopping list
- 8 oz. asparagus, sliced on the diagonal (peel the stems if they are a bit on the large size to get rid of any woodiness) shopping list
- 2 T. dry white wine shopping list
- 2 T. lemon juice shopping list
- Ground pepper shopping list
- 5 oz. Linguini, cooked and drained shopping list
- 1/4 c. Parmesan and 3/4 mozzarella cheese, grated shopping list
How to make it
- Cook asparagus till almost done (only you know who you like it cooked, just don’t make it mushy or the whole meal will be green. It’s ok though if you're an Irish fan! :-)
- Sauté onion and garlic in 2 T. butter till soft
- Add warm cooked asparagus to the onions and cook together for a further 2 mins
- Add the wine, lemon juice and pepper to taste.
- Cook for one more min mixing gently.
- In large bowl mix the cooked pasta with the Asparagus mixture and sprinkle the cheeses over the top.
