- 1lb ground meat(venison, pork, beef, chicken, etc) shopping list
- 1lb ground chorizo shopping list
- 1 can Rotel tomatoes shopping list
- 14oz tomato sauce shopping list
- 1 packet taco seasoning(or the equivalent, homemade, which is what I do) shopping list
- 2T olive oil shopping list
- 1 small onion, diced shopping list
- 1 bell pepper, diced shopping list
- 2 cups cooked rice shopping list
- 1 can black beans shopping list
- 4oz asadero(or other Mexican white, melting cheese) grated or sliced shopping list
- 4oz pepper Jack, grated shopping list
- 1/4 cup milk shopping list
- ** a prepared queso blanco can probably be subbed, here. About a cup, and still add the butter, sour cream and Cotija, as below shopping list
- 2T butter shopping list
- 1 cup Cotija cheese, shredded shopping list
- 8oz sour cream shopping list
- 6 8inch flour tortillas shopping list
- sliced black olives, sour cream guacamole, sliced green onions and fresh cilantro for serving shopping list
How to make it
- In large skillet, saute onion and pepper in oil until just getting soft.
- Add black beans and rice and stir to combine, and warm through.
- Remove from pan and set aside.
- In same skillet, cook meats until just browned.
- Add taco seasoning, Rotel, and tomato sauce and simmer until slightly thickened.
- Meanwhile, in microwave or double broiled, melt asadero, Pepper Jack, milk and butter, stirring often. Add sour cream and 3/4 cup Cotija. Set aside.
- Place 2 tortillas in bottom of lightly sprayed 8inch glass casserole. See Photo
- Top with about 1/3 of meat mixture See Photo
- Then add 1/2 of the rice/bean mixture See Photo
- Then spread with 1/2 of the melted cheese mixture. See Photo
- Repeat with remaining ingredients, ending with a meat layer and top that with 1/4 cup of Cotija.
- Bake covered at 350 for 1 hour, until bubbly, removing cover in last 15 minutes of baking
