Peach Champagne Ice

- 1 tsp unflavored gelatin shopping list
- 1/4 cup water shopping list
- 8 fresh peaches, quartered shopping list
- 1 cup sugar shopping list
- 2 tbs fresh lemon juice shopping list
- 2 cups champagne shopping list
How to make it
- Soften gelatin in water in small saucepan
- Stir over low heat until gelatin is dissolved
- In large bowl, combine peaches, sugar and lemon juice.
- Place peach mixture in blender or food procesor and whir until smooth. You may have to do this in batches
- Combine gelatin, champagne and peach mixture and place in cannister of ice cream mixer and freeze.
- Place in freezer containers and place in freezer compartment of refrigerator until firm. This allows you to do this ahead.
- Serve in champagne or squat glasses and decorate with fresh mint leaves, if desired.
