How to make it

  • Soften gelatin in water in small saucepan
  • Stir over low heat until gelatin is dissolved
  • In large bowl, combine peaches, sugar and lemon juice.
  • Place peach mixture in blender or food procesor and whir until smooth. You may have to do this in batches
  • Combine gelatin, champagne and peach mixture and place in cannister of ice cream mixer and freeze.
  • Place in freezer containers and place in freezer compartment of refrigerator until firm. This allows you to do this ahead.
  • Serve in champagne or squat glasses and decorate with fresh mint leaves, if desired.
