Refreshing, this can be served at a cookout as a first course, or as an end to the meal. Makes 24 half-cup servings and is perfect for a gathering.

Ingredients
  • 1 tsp unflavored gelatin
  • 1/4 cup water
  • 8 fresh peaches, quartered
  • 1 cup sugar
  • 2 tbs fresh lemon juice
  • 2 cups Champagne

Directions
  1. Soften gelatin in water in small saucepan
  2. Stir over low heat until gelatin is dissolved
  3. In large bowl, combine peaches, sugar and lemon juice.
  4. Place peach mixture in blender or food procesor and whir until smooth. You may have to do this in batches
  5. Combine gelatin, champagne and peach mixture and place in cannister of ice cream mixer and freeze.
  6. Place in freezer containers and place in freezer compartment of refrigerator until firm. This allows you to do this ahead.
  7. Serve in champagne or squat glasses and decorate with fresh mint leaves, if desired.
