                    - 1lb penne pasta shopping list
- 2T butter shopping list
- 4 cloves garlic, minced shopping list
- 1/3 cup white wine shopping list
- 2 1/2 cups heavy cream shopping list
- 1 cup chicken or veggie stock shopping list
- 1/2 cup clam juice(can sub more broth, if desired) shopping list
- 12-16oz raw or cooked crawfish meat(can sub crab or lobster meat, if available and/or preferred) shopping list
- 8 oz fresh mushrooms, sliced shopping list
- 2t Old Bay Seasoning shopping list
- 2T Cajun, Creole or similar seasoning shopping list
- 1t dry mustard shopping list
- dash of hot sauce(optional) shopping list
- about 1t fresh lemon juice shopping list
- 1/4 cup fresh parsley, chopped shopping list
- salt and fresh ground pepper shopping list
- 1/2 cup fresh parmesan cheese, grated. shopping list
How to make it 
                    - In large sauce pan melt butter with garlic over low heat.
- Add mushrooms, stock, clam juice,cream and wine and simmer about 30 minutes See Photo. *if using fresh seafood, add about halfway through this simmer
- Set water to boil and cook pasta per package directions, to finish cooking when sauce is done, about 40 minutes
- Add cooked crawfish meat(make sure meat is thoroughly drained See Photo. I use a cheesecloth.) and remaining seasonings, lemon juice and Parmesan cheese and stir well to warm through and melt cheese.
- Sauce will be somewhat thin. It is meant to be tossed with warm pasta and will coat it, rather than a sauce to spoon over pasta.
- Serve immediately.

                		This stuff is awesome! I live 20 minutes from Slidell, so yes I used a little Tony's on mine. I also sudstituted angel hair pasta for pene because I like it better. The sauce is delicious! Thanks for sharing.  mandymoore
