My Grandmothers Corn Pudding

- ½ diced green pepper shopping list
- 1 medium onion diced shopping list
- 3 tablespoons butter shopping list
- 2 teaspoons flour shopping list
- salt to taste shopping list
- 1 beaten egg shopping list
- 1 teaspoon dry mustard shopping list
- 1 cup whole milk shopping list
- ½ cup dry fine breadcrumbs shopping list
- 1 cup Ritz crackers shopping list
- 2 cups corn, canned or fresh shopping list
- 1 teaspoon paprika shopping list
How to make it
- Saute peppers and onion in butter until opaque and tender. Mix flour, paprika, salt, dry mustard, and milk into pepper and onion mixture. Cook until thickened. Set aside. Add beaten egg to corn, mix well. Combine egg and corn mixture with the thickened sauce. Add mixture to buttered baking dish.
- Top with breadcrumbs and crushed Ritz crackers and dollops of butter.
- Bake 25 - 30 minutes in a 350 degree oven,
- Serves 6-8

I had to give this a try, I love Corn Pudding and this was delicious. A little time consuming to prepare but well worth it. Thanks for sharing.

Your grandmother was a fabulous cook judging from her recipes. You're right, this is true southern. The corn pudding should have been rated a 5 and I gave it that. What I like is she didn't scrimp on the good ingredients, as so many do. These recipes...more
