Sweet Onion Cornbread With Cheddar Cheese Recipe

Ingredients

1 1/2 cups yellow cornmeal

3/4 cup flour

1/2 Tbs. baking powder

1/2 Tbs. salt

1/4 tps. baking soda

2 Tbs. butter,divided

1/2 quart buttermilk

1/2 cup Sweet onion

2 ounces sharp Cheddar cheese, shredded

Directions

Mix dry ingredients together reserve. Melt 2 Tbs. butter in a 9"x9"x2" pan in a 450 degree F oven.

Meanwhile, stir buttermilk into dry ingredients; fold in onion and cheese. Bake at 450 degreese F until just firm in the center and lightly browned on the edges, about 25 minutes. Remove; let rest 15 minutes before cutting. Cut into 12 pieces.
